Day One Hundred & Twenty-Five

I am grateful for the amazing dinner I just made. Fresh shrimp, avocado, cucumber, asparagus, and leeks, with lime feta dressing. It was fun and quick to make and tasted so amazing. I usually eat like crap during finals, so I'm feeling very thankful that I decided to take the time to both grocery shop and cook this weekend.

  2. Mich, it's the first time I've cooked for myself in probably 2 weeks!! Also, this is what I wanted to make for dinner in AZ, but our silly other friends don't like shrimp all that much. But perhaps you and I could switch making lunches one day and I could make this for us?!?!?! It's SO GOOD. Filling and light at the same time.
